I (and my husband helped while I nursed the baby) made the
Sweet and Spicy Beef with Noodles for dinner.
The entire family loved it. I just love it when there isn't any complaining (with the usual exception of John Paul having to "power through" the mushrooms) and the food all gets eaten! I did make a few changes to the recipe. The biggest change I made was to serve it with rice instead of noodles. Because I made it with rice, I decided to serve the simple stir-fry family style. Other changes I made include adding 3 chopped carrots, just under a pound of grass fed steak (not the tenderloin that the original recipe calls for) thinly sliced, and since I needed to serve 5 people, I increased the amount of all the veggies (1 whole red bell pepper, a small onion, 9 baby bella mushrooms, 4-5 handfuls of sugar snap peas) and the soy sauce and honey. I cooked up 2 cups of rice in 4 cups of chicken broth. This amount served us well and provided a small single serving left over. My husband said next time adding some fresh minced ginger would be delicious too.
We will definitely make this meal again!
